All About The Simplistic And Quick South Indian Dessert - The Rava Kesari

When you think of South Indian desserts, this is the first one that comes to mind. And this one is also the easiest one on the list. It takes under ten ingredients and just a couple of minutes to prepare and it's better than anything you can get from a restaurant.


Rava Kesari is traditionally enjoyed during festival season, but seeing that festivities aren’t that far away, keeping this recipe in the arsenal is extra important.


Traditional rava kesari will call for real Kesar, but real Kesar is expensive and in some cases hard to come by. If that’s the case, swap out the kesar for some organic food colour, there won’t be any kesar but it'll at least look the part. But make sure you purchase the food colour from a trusted brand.


 You’ll Need


1/2 cup of rava

1/2 cup of milk

1 cup of water

2/3 cup of sugar

3 tbsp of ghee

Handful of cashews

3 pods of cardamom

Couple strands of kesar


Instructions

1. In a hot pan, roast the rava till it is slightly golden- brown keep stirring and ensure to not burn.

2. In another pan, mix in a third of the ghee and roast the cashews.

3. Pour in the water and the milk in the same pan and let it come to a boil.

4. Add a few strands of kesar and a pinch of salt and stir.

5. Add the rava and drop the heat.

6. Stir constantly to prevent lumps.

7. Once cooked through, add the sugar and continue stirring

8. Add the remaining ghee and mix.

9. Lastly add the cashews and cardamom and stir.

10. The Rava Kesari is prepared.


Assembly

In a small bowl, fill the rava kesari to the brim. Flip the bowl onto a plate and gently tap to release the rava kesari from the bowl.

Once released, you’ll see a perfect hemispherical figure, take half a cashew and insert it at the top.
