Ingredients:

For the Dough:

2 cups of all-purpose flour

1/2 teaspoon salt

1/2 cup of water

For the Filling:

500 g of ground beef or lamb

1 large onion, finely chopped

2 cloves of garlic, minced

1 teaspoon of ground coriander

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

Salt and pepper to taste

For the yoghurt and Meat Sauce (Mastawa):

1 cup of plain yoghurt

1 cup beef or lamb broth (or water)

1 tablespoon of vegetable oil

1 small onion, finely chopped

1 clove of garlic, minced

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

Salt and pepper to taste

Instructions:

Prepare the Dough:

In a large mixing bowl, combine the flour and salt.

Gradually add water and knead the mixture to form a smooth and elastic dough.

Cover the dough with a damp cloth and let it rest for about 30 minutes.

Make the Filling:

In a separate bowl, mix the ground meat, finely chopped onion, minced garlic, ground coriander, ground cumin, ground turmeric, salt, and pepper.

Starting from one end of the folded edge, pinch and fold a small section of the dough towards the centre. Repeat on the other side until you have a series of overlapping pleats along the edge.

Steam the Mantu:

Arrange the folded Mantu in a steamer basket lined with parchment paper or cabbage leaves to prevent sticking.

Steam the Mantu for about 25–30 minutes until the dough is cooked through and the filling is tender.

Arrange the steamed Mantu on a serving platter.
