A Guide To Making Creamy Odia Style Kheer

Traditional Indian kheer requires a handful of ingredients and a little bit of your time. You can serve it warm or cold in ‘mitti ka bartan’. 

Odia style kheer is different from the regular one but like the classic, the notes of cardamom, nuts & rose water are still there. This recipe makes six servings so don’t forget to call over some friends, we promise you don’t want to be alone in a room with this dessert.


You’ll Need


A 1/4 cup of rice

1 tbsp of milk

2 tbsp of milk powder

A 1/4 cup of condensed milk

A 1/8 cup of sugar

2 tbsp of ghee

A 1/2 cup of assorted nuts 

3 pods of cardamon 

1 tsp of rose water

Salt


Instructions

  1. Soak the rice for at least half an hour. 
  2. In a pot, add the ghee.
  3. Add the dry fruits and fry them till they get a nice golden colour.
  4. Remove the dry fruits and add the sugar.
  5. Allow the sugar to caramelize. Stir continuously to prevent clumps and burning. 
  6. Drain the water from the rice and set it aside. 
  7. In another vessel, pour the milk and heat.
  8. Add rice slowly and cook.
  9. Once it softens, add the milk powder and cook until the milk thickens.
  10. Pour in the condensed milk and cook for another ten minutes.
  11. Add the green cardamom, the dry fruits, and a pinch of salt and mix well.
  12. Take it off the stove, and let it reach room temperature.
  13. At this point, you can either serve or add put it in a pot and refrigerate for having later.
