1. Corn Fritters 

If you like crunchy fritters or patties for breakfast and want to explore a healthier version, this is the recipe to try. Just mix place boiled corn and potatoes in a large bowl and mash them up together, then add chopped onions, herbs like coriander leaves and spices like turmeric, red chilli powder, ginger-garlic paste, garam masala and green chillies. Mix well and shape into patties or fritters and bake or air-fry after brushing a bit of oil. Enjoy the Corn Fritters with chutney or place them between pav or burger buns for a quickie breakfast on the go. 

2. Corn Uttapam 

Give regular old Uttapams a winter-special twist by adding sweet corn kernels to the batter. You can also add herbs, onions, tomatoes and more. Ready-to-make uttapam batters can really come in handy here, so keep a stock ready. Just fry up the Corn Uttapams on a tawa until golden-brown on both sides and serve up with coconut chutney or tomato-peanut chutney for a quick breakfast.

This version of pancakes are a savoury burst of flavours that you can enjoy not only on weekdays but also weekends because they are so easy to whip up and kids love them too. Make a pancake batter with flour, eggs, sugar, salt, baking powder and herbs—you can also add herbs if you want. Add boiled corn kernels and mix well. Place ladles full of the batter on a gridle pan, cook until golden-brown on both sides and serve up with a side of ketchup, mayo or mustard sauce based on your preferences. 

4. Corn Poha 

If you like the crunch and taste of the savoury Indian breakfast called Poha, then this version is a must-try this winter. Cook onions, curry leaves, peanuts and mild spices like you usually do with a poha, then add sweet corn and cook until every kernel is cooked. 5. Corn-Stuffed Omelette 

A protein-packed and vibrant breakfast option for those who can’t do without their eggs every morning, this stuffed omelette features lots and lots of sweet corn. Just make the omelette like you would usually and once one side starts turning golden, add onions, corn, herbs and some feta cheese on one side of the omelette. Gently fold the omelette and cook until done. This one works without any toast, but you can totally pair it with bread too if you want it to be more filling. 

6. Corn Salad 

A healthy start to the day is all most of us want, and this Corn Salad is perfect for those days. Just boil the sweet corn and add them to a bowl. Top with chopped cucumbers, tomatoes, lettuce, herbs, a few soaked nuts and toasted seeds and mix well. Add a dressing if you have one, but this one works with a simple lemon juice, pepper and salt mix too. It’s always wise to pack up any leftovers and take them to work or keep them away for when you come back and want a quick and healthy snack later in the day. 

7. Cheesy Corn Toast 

Indulgent, savoury and cheesy, this Cheesy Corn Toast is a hit with both adults and kids—so it is the best and the quickest breakfast option when you are in a hurry. Just place boiled sweet corn in a large bowl with onions, herbs, pepper and even chopped bell peppers if you have them. Add plenty of grated cheese, mix well and top bread slices with this mix. Place the slices in the oven or air fryer for a four-five minutes at 150 degrees and you’ll have a smoky and delicious Cheesy Corn Toast to indulge in no time.
