Loaded with antioxidants, many believe that adding flavours of tea to a dessert will make it bitter, but on the contrary, if you manage to keep the proportions right, the recipe will turn out better than you have expected. Moreover, the fragrance of tea compliments the bitter-sweet taste of cocoa powder.

While making tea-infused desserts, usually bakers use different types of green tea, black tea, fruit tea, and herbal tea. Choosing which tea will pair with which recipe might be a little tricky, but once you get the hang of it, nothing can stop you from creating a variety of delights that no one has even heard of. Here are some options for you to try out for the next gathering with friends.

Black Tea Pudding

You have to start by making tea using milk, black tea leaves, and sugar. After it has simmered for a good 5 minutes, soak the raisins in it for 10 minutes. In a bowl, keep a mixture of milk and corn flour ready. It will help the pudding to solidify.

Add the tea on the stove and keep the flame low while adding the cornflour mixture to it. Keep stirring until you witness the liquid thickening and the pudding gaining consistency and shape. Pour this mix into moulds and top it with grated chocolate. After refrigerating for at least 2-3 hours, you can serve it.

Double Chocolate Irish Tea Oat Muffins

This is one of the easiest recipes to make muffins infused with tea. You will need at least two black tea bags, dark chocolate, oats, sugar, eggs, and maple syrup. Mix all these ingredients, except for tea bags, together into a batter. You don’t have to worry about the chunks of oats and chocolate because the batter does not need to be smooth.

Add some milk to adjust the consistency. It will ensure that muffins remain soft after baking. Cook the mixture on low flame and drop the tea bags to infuse the aroma of tea in the batter. After a couple of minutes, remove the tea bags, pour the batter into muffin or cupcake moulds, and bake for 15-20 minutes until the toothpick comes out clean. Drizzle some honey on the top for extra sweetness.

Match Mousse

To ace matcha mousse, beat whipping cream with an electric beater until you achieve soft peaks. Add condensed milk and beat again. It is time to add matcha powder to the mix and gently fold it in with a rubber spatula.

While you are preparing ingredients for the mousse, melt some quality chocolate in the double boiler. Do not keep it on heat for too long. Pour the chocolate into moulds and top each with matcha mousse batter. Refrigerate them for at least 2 hours and serve them cold.

Rose Tea Chocolate Truffle

You will use low-fat cream for this recipe and allow it to simmer in a pan along with two rose tea bags. In a double boiler, take chunks of high-quality chocolate and melt them. After 5 minutes, take out the tea bags, and pour the cream over melted chocolate.

Using a spatula, mix the two ingredients together, cover the bowl, and refrigerate for a couple of hours. Use an ice cream scoop to take a good amount of this mixture into your hands and roll them into little balls. Toss each of them in cocoa powder and serve them to your guests.

Peppermint Tea Brownies

To create these refreshing peppermint tea brownies, you will need melted chocolate. In another bowl, beat sugar and eggs together until you get a fluffy concoction. It will ensure that your brownies are soft and offer a melt-in-the-mouth experience.

Mix the chocolate with beaten eggs and sugar paste. Keep a combination of cocoa powder and all-purpose flour ready in another bowl. Pour it into the chocolate mixture with a pinch of peppermint tea leaves. Pour this smooth batter into moulds, top each container with chocolate chips, and bake the brownies for 25-30 minutes.
