Summer is here in full swing and as we try to get through the day amid the scorching heat, one thing that we often get stuck with is deciding on what to eat for lunch or dinner! Amid the constant struggle of maintaining a work-life balance, especially during the weekdays, household chores, running errands, hectic office schedules and what not, planning a menu seems like an arduous task. Doesn’t it? And because of these things, we try to go the easy way, which is often unhealthy and boring, let alone seasonal. If you wish to try some, here we have a list of 5 mango recipes that are perfect to plan for your lunch. Once you try them, we are sure you won’t look back. Let’s get started with the recipes.

1. Mango Rice

This has to be one of my most favourite. Given my amateurish cooking skills, rice is one of the easiest dishes I find when it comes to cooking. And this mango rice recipe pairs the tarty flavour of raw mango with the wholesomeness of rice, which results in a comfort dish you won’t be able to resist. Serve it with a dal of your choice and you have a nutritious lunch to enjoy.

2. Tok Dal (Bengali-Style Raw Mango Dal)

Raw mango has many lovers because of its tantalising, tarty flavour. Combine it with the Bengali-style dal, which is also referred to as tok dal or aam dal, and it will make for a classic meal during the hot afternoons.

3. Mango Kuzhambu

This is a tangy mango curry recipe for lunch that you can also make for dinner. Handful of dried mango pieces, tamarind, gooseberry, a pinch of hing and curry leaves along with simple spices make for this refreshing and mouth-watering dish.

4. Mango Chicken Curry

This South Indian curry, which is also traditionally known as pacha manga curry, is a unique combination of coconut milk, curry leaves, mustard seeds, raw mango and succulent chunks of chicken. Quite a creative dish, perfect for your next meal. Pair with rice or chapati and you’ll have a wholesome meal to enjoy.
