Make these simple yet delicious zucchini fritters, flavoured with fresh mint and feta cheese as a snack to enjoy with a cup of tea or coffee.
2 zucchini, grated 2 eggs ½ cup fresh mint, chopped 2 cloves garlic, sliced 2 spring onions, chopped 150 grams feta cheese 1 teaspoon red chilli powder 1 cup all-purpose flour Oil, for pan-frying Salt and pepper, to taste Lime wedges, to serve
Place the grated zucchini in a single layer on a clean kitchen towel to let the excess moisture be absorbed.
Transfer the zucchini to a mixing bowl and crumble the feta cheese in.
Follow it up with the eggs, red chilli powder, spring onions, garlic, flour and combine everything using a spatula.
Season with salt and pepper and mix into a thick batter.
Pour a ladleful on to a pan greased with oil and let it cook on one side for 3-4 minutes, on a medium heat.
Flip it over in the oil and cook for another two minutes before extracting on to a paper towel.
Squeeze some lemon juice on top and serve warm.
