½ cup moong dal ½ cup urad dal ¼ cup chopped cashews ¼ cup raisins Half a chopped ginger 2 chopped green chilies Handful of chopped coriander leaves
Blend urad dal and moong dal after soaking them overnight or for at least 2 hours. Add chilled water while blending.
In a bowl, pour the dals with a pinch of salt. Whisk the batter until you see a cream-like consistency.
When the mixture attains a thick consistency, place a spoonful of batter into the idli maker or steamer.
With a filling of raisins, cashews and coriander inside the vada, steam them for 12 to 15 minutes.
When done, unmould the vadas and put them into salted water for 20 to 30 minutes. Then, squeeze the excess water.
Add beaten curd, tamarind and green chutney and some boondi with black salt, red chilli powder, chaat masala and cumin powder.
Garnish with some coriander leaves and serve!
