Snacking can be the downfall of even the most dedicated diet. But when you know the right substitutes, it becomes easy to eat healthy without compromising on taste. These cauliflower nuggets can be made without oil and are baked for optimum flavour.
1 small head of cauliflower, cut into florets 1 cup bread crumbs 1/4 cup nutritional yeast 1 teaspoon garlic powder 1 teaspoon paprika 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 cup unsweetened plant-based milk 1 tablespoon Dijon mustard Cooking spray
Preheat oven to 220°C and in a bowl, combine bread crumbs, nutritional yeast, garlic powder, paprika, salt, and black pepper. Set aside.
In a separate bowl, whisk together milk and Dijon mustard. Dip each cauliflower floret into the milk mixture, allowing excess to drip off, then coat it with the bread crumb mixture.
Place the coated cauliflower on a baking sheet lined with parchment paper. Repeat for all florets.
Lightly spray the cauliflower nuggets with cooking spray. Bake for 20-25 minutes, until the nuggets are golden brown and crispy.
Let them cool and serve along with your favourite dipping sauce.
