Who doesn't love muffins for breakfast? These tiny cakes are perfect to start your day with their lovely, sweet flavour. But how about we take it up a notch with a delicious raspberry twist? Here's the recipe:

2 cups all-purpose flour 1 cup sugar 1/2 cup milk 2 lightly beaten eggs 2 teaspoons baking powder 1/3 cup shortening 1 teaspoon vanilla extract 1 cup of fresh or frozen raspberries

Start by preheating your oven to 190 degrees Celsius.

The shortening and sugar should be beaten in a large bowl to make them fluffy and light.

Incorporate eggs one by one and blend them well.

Mix the flour and baking powder together in another bowl.

Next, alternate adding the flour, milk, and vanilla to the batter. To combine, give it a hand stir using a spatula.

Toss the berries gently in the flour. After that, gently mix them into the batter.

After about two-thirds of the way full, dust each muffin cup with half a teaspoon of sugar.

Bake for 20–25 minutes, or until the muffins bounce back when lightly pressed in the centre.

After letting the muffins cool in the tray for ten minutes, move them to a wire rack to finish cooling.
