Ingredients

4 large onions, thinly sliced 3 tablespoons unsalted butter 1 tablespoon olive oil 4 cups beef broth or vegetable broth 1 cup red wine Salt and pepper to taste Baguette slices Gruyère cheese, grated

Step 1

In a large pot, melt butter and oil. Add onions; cook until caramelized, stirring occasionally, about 20 minutes.

Pour in red wine, scraping the bottom of the pot. Simmer until the wine reduces by half.
