A popular Japanese stir-fried noodle dish made with thick udon noodles, the yaki udon is typically cooked with a variety of vegetables, protein and savoury sauces. Whip up this delicious mix of textures and flavours and enjoy with a side salad or soup.
2 chicken breasts, sliced thinly 1 pack of udon noodles 2 tablespoons vegetable oil 1 onion, sliced 2 cloves garlic, minced 1 bell pepper, sliced 1 carrot, julienned 2 cups broccoli florets 1 cup sliced mushrooms ¼ cup soy sauce 2 tablespoons oyster sauce 1 tablespoon mirin 1 tablespoon sesame oil 1 teaspoon sugar ½ teaspoon black pepper 2 green onions, chopped Sesame seeds, for garnish
Cook the udon noodles according to the package instructions and set aside while combining the thinly sliced chicken with soy sauce, mirin and black pepper in a bowl.
Let it marinate for at least 15-20 minutes while you heat the oil in a skillet.
Sear the chicken pieces until browned on the outside and transfer to a dish before adding the sliced onions and garlic to sauté until fragrant.
Add the vegetables and stir-fry for about 3-4 minutes until they are tender-crisp.
Return the cooked chicken to the skillet along with the cooked udon noodles.
Drizzle soy sauce, oyster sauce, sugar and sesame oil over the mixture and toss everything together until well combined.
Garnish with green onions and sesame seeds before serving hot.
