World Nutrition Week 2023: A Wholesome Ragi Soup To Stay Healthy

Celebrate World Nutrition Week with a wholesome Ragi Veggie Soup, a delicious and weight-conscious choice. This nutritious soup offers both flavor and health benefits, making it a perfect addition to your diet.

Ingredients

1-2 chillies   ½ inch ginger piece 2-3 garlic cloves   2-3 tbsp ragi flour (adjust for desired thickness)   Mixed veggies of your choice (beans, broccoli, carrot)   100g tofu   Water (around 2 cups, add gradually)   Spices: 1 tsp cumin powder, ¼ tsp black pepper, salt to taste, 1 tsp mustard seeds

Step 1

Chop veggies and tofu. Heat oil in a pan, add mustard seeds, chili, ginger, and garlic. Sauté for a few minutes.

Step 2

Add veggies, tofu, and spices. Sauté a bit more. Pour in 1 cup water and let it boil.

Step 3

Mix 2 tbsp ragi flour with 1 cup water till smooth and add to the pan. Let it boil. Adjust thickness with more ragi flour if needed.

Taste, adjust the seasoning, and enjoy your hot and hearty soup!
