Also known as Peshawari kebabs, these snacking bites made with spiced tender chicken keema and shallow-fried are perfect to indulge in on a rainy evening.
250 grams chicken keema 2 onions, chopped 3-4 green chillies, chopped 2 tablespoons ginger-garlic paste 2 small tomatoes, chopped ¼ cup chopped mint ¼ cup chopped coriander 1 teaspoon cumin powder ½ teaspoon turmeric powder 2 teaspoons coriander powder 1 teaspoon garam masala 1 teaspoon crushed black pepper ¼ teaspoon ginger powder 1 egg Salt, to taste Oil, for shallow-frying
Combine the minced chicken, onions, tomatoes, herbs and ginger-garlic paste in a bowl.
Add the green chillies and spice powders before seasoning with salt.
Crack the egg into the mixture and fold gently by hand but do not overmix.
Pour the oil in shallow frying pan and heat until it begins to shine on the surface.
Divide the meat into small portions and make flat discs in your hand.
Place gently in the hot oil and allow it to cook for 3 minutes on one side and 2 minutes on the second.
Once browned, remove from the pan and place on kitchen towels to let the excess oil drip.
Serve hot with a squeeze of lemon juice and green chutney.
