Infused with the aroma of makrut lime leaves and the warm notes of ginger, this gin-spiked ice cream is the ideal summer frozen treat for adults. Enjoy a scoop of this as it is or with a sprinkle of fresh lime zest for extra zing.
2 cups heavy cream 1 cup milk 5-6 slices ginger 15-18 makrut lime leaves ¾ cup sugar 6 egg yolks 5 tablespoons gin 1 teaspoon rose water 1 pinch salt
Combine the heavy cream, milk, ginger and lime leaves in a saucepan and bring to a boil.
Stir it occasionally and simmer for 15 minutes before extracting half a cup and setting aside to cool.
Whisk the eggs and sugar in a separate bowl and pour the heavy cream mixture in a steady stream while whisking.
Strain the remaining mixture to discard the lime leaves and ginger and add it back to the saucepan along with the egg mixture.
Use a wooden spoon to stir the mixture over a low flame and thicken enough to coat the spoon and form a clean line when swiped.
Cool halfway and add the rose water, gin and salt before stirring and freezing overnight.
Blend the mixture in a food processor for 3-4 minutes, until airy and freeze again for 4-5 hours before serving.
