Beat the eggs well to incorporate air, which will make the omelette fluffier.
A small amount of water (1-2 teaspoons per egg) or milk helps create steam as the eggs cook, leading to a softer omelette.
Use a low to medium-low heat to cook the omelette slowly. This prevents overcooking and helps keep the texture soft.
Melt butter in the pan before adding the eggs. Butter helps the omelette cook evenly and adds richness.
After pouring the egg mixture into the pan, cover it with a lid for a minute or two. This traps heat and allows the top of the omelette to cook without flipping.
Take the omelette off the heat while it's still a bit undercooked, as it will continue to cook with the residual heat. This keeps it from becoming dry.
