Perfectly ripe strawberries and soft whipped cream make for the seasonal fruit-based dessert you’d enjoy this winter. Enjoy this as dessert or as a decadent snack to satiate sugar cravings.

250 grams superfine sugar 4 egg whites 1 teaspoon white vinegar 1 teaspoon corn starch 1 teaspoon vanilla extract

Preheat the oven to 150°C while you mark a large circle on the surface of parchment paper, using a pencil.

Whisk the egg whites using an electric mixer until they form stiff peaks before whisking in the sugar 1 tablespoon at a time.

Once the meringue looks glossy, whisk in the remaining ingredients and spread it within the confines of the circle marked on the parchment.

Use your spatula to create a slight crater in the middle and bake for an hour before letting it cool completely in the oven.

Whisk the heavy cream to soft peaks and transfer the cooled pavlova gently to a serving dish.

Macerate the sugar combined with a portion of the strawberries using a fork and set aside.

Spoon over the whipped cream into the crater of the pavlova and top with the macerated berries.
