Atte Ki Pinni is a traditional Punjabi winter delicacy made from freshly-milled whole wheat flour, jaggery, and dry fruit and nuts. Here's how to make it.
500 gm atta 1¼ cup ghee 2 cup jaggery ½ tsp black cardamom powder ½ tsp green cardamom powder ¾ cup chopped almonds, cashews, and walnuts ¼ cup raisins
Heat 2 tbsp of ghee in a kadhai and add the chopped nuts and raisins. Fry them till the raisins turn plump, then set them aside.
Add the remaining ghee to the kadhai, followed by the freshly-milled atta, and cook it till its raw smell subsides.
Add both the ground cardamom and jaggery to the atta and ghee mixture and incorporate them in.
Take the mixture out onto a plate and spread it out for cooling. Add the chopped nuts and raisins and fold them into the mixture.
Once the mixture has cooled enough to handle, shape them into tiny balls or pinni and enjoy.
