Melt into the cosy winter spirit with Methi Matar Malai—a delicious, creamy blend that brings together the earthy fenugreek leaves and the sweet green peas in a beautiful play of flavours that will warm your heart with every spoonful.

1 tbsp oil 1-2 bay leaves 1 tbsp jeera 2 tbsp coarsely grounded ginger garlic green chilli 3 tbsp besan 1 onion, boiled & pureed ¼ cup cashews, boiled & pureed 1 bunch methi leaves ½ cup peas 1-1.5 cups water Salt to taste 1 tbsp sugar 1 tsp garam masala 4-5 tbsp cream/ malai 1 tbsp butter
Boil onion and cashew together in 1-1.5cups of water and blitz till smooth. Heat oil in a pan. Add the bay leaf, jeera & the ground ginger garlic green chilli.
Simply add the besan and cook it for three to four minutes. Stir in the cashew and onion paste that has been boiled, and cook for one minute.
Put the methi leaves in and wait for it to get soft. Add peas and water, stir well, and let it boil. Now add salt, sugar, and garam masala.
Pour in the cream and remove from heat. Add a little butter and additional cream for garnish. Serve with roti and relish hot.
