Trying to eat more salads this winter? Go for seasonal recipes! This orange and walnut salad has the perfect balance of textures and some robust flavours. You can also add in some avocado or micro greens to this if you like

4 cups spinach, arugula (or any chopped baby greens) 2 peeled oranges 1/2 cup walnuts toasted 1/4 cup red onion,[ 1/4 cup feta cheese, crumbled 3 tablespoons olive oil 2 tablespoons orange juice 1 tablespoon balsamic vinegar 1 teaspoon honey Salt and pepper to taste

Wash and thoroughly dry the salad greens. Place them in a large salad bowl. Peel the oranges and carefully segment them, removing any membranes. Add the orange segments to the salad bowl.

In a dry skillet over medium heat, toast the walnuts for a few minutes until they become fragrant. Be careful not to burn them. Once toasted, roughly chop them

Add the toasted walnuts, thinly sliced red onion, and crumbled feta cheese (if using) to the salad bowl. Toss the ingredients gently to combine.

In a small bowl, whisk together the extra-virgin olive oil, fresh orange juice, balsamic vinegar, honey or maple syrup, salt, and pepper. Adjust the sweetness and acidity to your liking.

Drizzle the dressing over the salad, starting with a few tablespoons and adding more as needed. Toss the salad to ensure an even coating

Divide the salad among individual plates or bowls. Optionally, garnish with additional walnuts, feta cheese, or fresh herbs
