Do you prefer noodle soup in winters? Then you’ll love double noodle soup which features two different types of noodles; it’s typically made with one traditional and one instant noodle, to maintain a balance in textures. Here’s a simple recipe which you can follow to make it at home!

8 cups chicken broth 2 cups water 2 large carrots 2 celery stalks, chopped 1 onion, diced 3 cloves garlic, minced 1 bay leaf 1 tablespoon olive oil 1 cup egg noodles 1 cup udon noodles 1 cup cooked chicken 1 cup baby spinach 1 tablespoon fresh parsley

In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until the vegetables are slightly softened. Add minced garlic and continue to sauté for one minute

Pour in the chicken or vegetable broth and water. Add the bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes to allow the flavours to meld.

In a separate pot, cook the egg noodles and udon noodles according to the package instructions. Drain and set aside.

If using shredded chicken, add it to the broth and let it simmer for a few more minutes until heated through. Add the cooked noodles to the broth.

Stir in the chopped baby spinach or kale and let it wilt in the hot soup.

Taste the soup and adjust the seasoning with salt and pepper as needed. Garnish with fresh parsley and serve with lemon wedges on the side.
