Winter Special Carrot Payasam Is An Unmissable Dessert

Payasam is a decadent south Indian version of kheer which can be made in many different ways. Here’s how you can give it a winter spin with carrots.

Ingredients

200 gms carrot (washed and peeled) 3 green cardamoms Handful of cashews 2 tbsp ghee 2 ½ cups coconut milk ½ cup powdered jaggery ¼ cup raisins Water 

Roughly chop the carrots and boil them till tender. Once done, drain the excess water and keep them aside.  

Take the carrots and blend them well with ½ cup of water. Meanwhile, mix jaggery with a cup of water in a bowl. 

Now in a deep-bottomed pan, add carrot puree with jaggery mix and coconut milk. Mix well and simmer for a minute until thick. 

Once done, turn off the flame and keep aside. Now take another pan and toss cashews with ghee over low flame.

Add raisins and cardamom powder to it too. Garnish over the payasam and serve hot.
