Ingredients

Ingredients for paste:   Onion-1 large   Garlic cloves - 10   Ginger - 1 inch piece   Lemongrass, few sprigs

Ingredients

Gravy ingredients:   2 tbsp oil   1/4 cup diced carrot   1/4 cup- cauliflower/ broccoli florets   1/4 cup - zucchini diced   1/4 cup - baby corn diced   1 cup - vegetable stock 1 cup - coconut milk   1/2 tsp - turmeric powder   2 tbsp - chickpea flour   Salt to taste   1 cup boiled noodles

Ingredients

Condiments:   1/4 cup- spring onions   1/2 cup- roasted peanuts   1/4 cup- brown onion   1/4 cup - fried chopped garlic   1tbsp - chilli flakes   Lemon slices  Boiled egg

Step 1

Grind all the ingredients of the paste to make a smooth paste. In a pan take oil and add the paste and saute for some time. Add the turmeric and chickpea flour and roast for some time.

Step 2

Add the stock and mix everything well to avoid lumps. Add the vegetables and cover and leave to boil.

Step 3

Add salt to taste and coconut milk and mix well and boil for 2 minutes. Gravy is done.

Take a bowl and add some boiled noodles. To this add the gravy and the condiments to your choice.
