The seasonal millet grain, which has been known to possess exceptional nutritional properties, bajra can be used to make a khichdi during winters. Find the recipe for this warm, cosy preparation that will fortify you against the winter cold.

½ cup yellow moong, soaked ½ cup bajra, soaked overnight 2 tablespoons ghee 2 small onions, diced 2 green chillies, slit 8 whole black peppercorns ¾ cup fresh green peas 1 teaspoon turmeric powder 2 cloves 1-inch piece cinnamon 1 potato, diced 2 cups hot water 1 stock cube Salt, to taste

Soak the moong dal for four hours and drain it to set aside.

Heat ghee in a pressure cooker and add the whole spices, to let them bloom.

Add the onions and green chillies and sauté until it begins to soften.

Follow it up with the potatoes and peas and continue to sauté it for 2-3 minutes.

Add the moong dal and bajra and mix thoroughly, before pouring in the hot water and crumbling the stock cube.

Season with salt and allow the khichdi to cook for 2-3 whistles, and allowing it to cool for a few minutes.
