Enjoy the flavours of the langar with this mouthwatering pickle that captures the spirit of communal feasting—Gajar Mooli Hari Mirch Ka Achaar—that you can make at home.

2 cups grated carrots 1 cup grated radish (mooli) 4-5 green chilies, finely chopped ½ cup mustard oil 1 tbsp mustard seeds 1 tbsp fennel seeds (saunf) 1 tbsp nigella seeds (kalonji) 1 tsp turmeric powder Salt to taste 1 tbsp jaggery (optional) Juice of 2 lemons
In a mixing bowl, combine grated carrots, radish, and chopped green chilies. Heat mustard oil until it smokes. Let it cool slightly.
Add mustard seeds, fennel seeds, nigella seeds, turmeric powder, and salt to the oil. Pour this mixture over the grated vegetables.
Add jaggery and lemon juice. Mix well. Allow the flavours to meld for a few hours before enjoying this homemade langar-style pickle with your meals.
