Methi Bajra Chillas are a tasty and healthy way to start your day, packed with the benefits of fenugreek and pearl millet.

1 cup bajra (pearl millet) flour ½ cup fresh methi (fenugreek) leaves, finely chopped ¼ cup finely chopped onions ¼ cup grated carrot ¼ cup besan (gram flour) 1 green chili, finely chopped ½ teaspoon cumin seeds Salt to taste Water, as needed Ghee or oil for cooking
In a mixing bowl, combine bajra flour, besan, chopped methi leaves, onions, grated carrot, green chili, cumin seeds, and salt. Gradually add water to form a smooth, lump-free batter with a pouring consistency.
Heat a non-stick pan over medium heat and lightly grease it with ghee or oil. Pour a ladleful of the batter onto the pan, spreading it in a circular motion to form a thin cheela. Cook until the edges turn golden brown, then flip and cook the other side.
Repeat the process for the remaining batter. Serve the Methi Bajra Cheela hot with chutney or yogurt for a wholesome and nutritious meal.
