Lehsuni Corn Palak: Winter Comfort in Every Flavourful Bite

Ingredients 

1 bundle/250 g spinach 1 tbsp oil 1 tsp jeera 2-3 green chillies, finely chopped 5-6 garlic cloves, finely chopped 1 onion, finely chopped 1 tbsp ginger garlic paste 1 tsp coriander powder 1 tsp garam masala ¼ tsp haldi 1 tbsp besan 1 tomato, finely chopped Salt to taste 1 tsp sugar 1 tsp kasuri methi 1 tsp black salt ½ cup corn, boiled 2 tbsp fresh cream

Tempering

1 tbsp butter 1 tsp jeera 2-3 dried red chillies 10-12 garlic cloves, sliced lengthwise

Step 1 

Blanch the spinach in hot water for 2 minutes and rinse it thoroughly. Grind it to a smooth paste.

Step 2

Heat oil in a pan. Add the jeera, green chillies, garlic and saute for 1 minute. Add the onion and cook for 2 minutes. Add the ginger garlic paste, coriander powder, garam masala, haldi and besan and cook for 2 minutes.

Step 3

Add the tomato and let it soften. Add the spinach puree, corn, salt, sugar, kasuri methi, black salt and mix well. Cook for 2-3 minutes.  

Step 4

Add in the cream. Heat butter in a pan. Add the jeera, red chillies & garlic & cook till the garlic browns a little. Add it to the corn palak. Garnish with some more cream. Serve hot with roti or naan and Enjoy.!
