You have heard about berry jams, pickles and even marmalade for sure. But have you heard of berry soup? Not too sweet and not too watery, it's delicious and creamy to eat. Try out this berry recipe!

2 cups mixed berries 1/4 cup granulated sugar 1 cup water 1 tablespoon fresh lemon juice 1 teaspoon lemon zest 1/2 teaspoon vanilla extract A pinch of salt Fresh mint leaves for garnish Greek yoghourt or whipped cream for serving

Add the berries in a medium saucepan with sugar, water, lemon juice, lemon zest, vanilla extract, and a pinch of salt.

Bring the mixture to a boil over medium heat.

Once softened, allow the berry mixture to cool slightly, then transfer it to a blender until smooth.

Refrigerate the berry soup for at least 2 hours or until it's well chilled.
