While dosas are one of the most loved breakfast dishes of South India, who doesn’t prefer a quick and easy breakfast, right?
Karacha means to mix in Tamil and the batter is a combination of rice flour, ragi, maida etc. and is made fluffy with addition of buttermilk.
• 1/2 cup rice flour • 1/4 cup whole wheat flour • 1/4 cup ragi flour • 1/4 cup all-purpose flour • 3 cup water • 1 tsp cumin seeds • 6-7 peppercorns coarsely crushed • 1 sprig curry leaves • Salt (to taste)
In a big vessel, add all flours and a pinch of salt. Add buttermilk very gradually and keep mixing until you make a smooth, lump-free paste. Add water and dilute the mixture.
Add cumin seeds, peppercorns and curry leaves. Heat a non-stick tawa and rub it with butter or sesame oil. Pour the batter and rotate in circular motion from outside the tawa till inside.
Throw in butter or drizzle oil. When edges begin to separate from bottom, carefully flip the dosa. Repeat the process. Serve dosas hot with chutney or sambar.
