Vegetable poha, a popular Indian breakfast dish, combines flattened rice with vibrant vegetables and spices. This quick, wholesome recipe is perfect for a nutritious start to your day or a light meal anytime.
Rinse one cup of poha (flattened rice) in water, drain, and set aside to soften. Dice one onion, one small potato, and a handful of mixed vegetables like peas, carrots, and capsicum.
In a pan, heat a tablespoon of oil and add half a teaspoon of mustard seeds. When they splutter, add a few curry leaves and a pinch of asafoetida (hing) for a burst of aroma.
Add diced onions and sauté until translucent. Next, add the potatoes and other vegetables with a pinch of turmeric and a sprinkle of salt. Cover and cook until the vegetables are tender.
Add the softened poha to the pan and gently mix with the vegetables, coating the poha evenly. Adjust salt as needed and cook on low heat for a minute or two.
Garnish with fresh coriander leaves and a sprinkle of lemon juice. Serve hot with a side of yoghurt or chutney.
