Millets are ancient supergrains that have long been a part of Indian food culture. This super easy and delicious Jowar Khichdi can be a snack, breakfast dish or a tiffin treat. Here is how to make it:
1 cup whole Jowar ( sorghum) 4 tablespoons oil 5 to 6 curry leaves 1 tablespoon whole cumin (jeera) 2 green chillies, slit 1 cup finely chopped mixed vegetables (corn, carrots & capsicum) 1/4 cup powdered roasted peanuts 1/4 cup finely chopped coriander leaves Salt to taste
Wash Jowar thoroughly and soak in water overnight.
Drain water and pressure cook Jowar in 3 to 4 cups water for 6 whistles.
Once cool, open the pressure cooker and drain out the water.
In a kadhai heat oil, crackle jeera, add curry leaves, green chillies and saute.
Add the vegetables and saute for a minute.
Add the peanut powder and mix well.
Add Jowar, salt and water. Mix well and cover cook on low flame for 5 minutes.
Switch off the flame and give a mix before serving.
