There is a reason why Khichdi is known as the ultimate Indian comfort food. This winter, try this wholesome and heartwarming Khichdi recipe for cosy winter meals.

1 cup Rice (basmati or any good parboiled rice preferred) 3/4 cup Whole Masoor/red lentils 1/4 cup Chana dal 1 medium Onion (Julienne) 1 medium Tomato (Chopped-Optional) 1 Tsp Ginger Garlic Paste 1 whole Red/ Green Chilli 1/2 Tsp Nigella seeds (kalonji or kalo jeera) 1/4 Tsp Garam Masala

3 Black Pepper crushed 1 medium size Potato (optional) A handful of green peas (optional) 1 Bay Leaf 1/2 Tsp Salt 2 Tsp Ghee Chopped Coriander leaves to garnish Water as much as required

Wash and soak rice and whole masoor dal for 15 mins. Wash and soak Chana dal at least for half an hour. Dice the potatoes.

Place a pressure cooker on medium heat. To the heated cooker add 2 tsp ghee. Now add whole spices: 1 bay leaf, 1/2 tsp nigella seeds (kalonji/kalo jire) and allow it to crackle.

Add julienned onions and saute till golden brown. Add 1 tsp ginger garlic paste, 1 whole Red/green chilli, 1/4 tsp garam masala powder and mix it well.

Add 2 tbsp chopped tomatoes, diced potatoes, green peas, 1/2 tsp salt and water as required. Step 6- Add soaked masoor and chana dal and bring to a boil.

Now add soaked rice and adequate water so that the water level should be raised by atleast one inch above of everything placed in the cooker.

Close the cooker, allow to cook for 2-3 whistles. This recipe can be done in an open part without a pressure cooker.

Garnish with crushed black paper powder and chopped coriander leaves. Serve hot with curd, raita or chutney.
