Whipped Brandy Butter: A Boozy Festive Addition To Your Dessert Tray

If Christmas isn’t filled with all things buttery, boozy and decadent, did you even ring in the festivities right?

Christmas is always a family affair, as it should be in every way. A sweet and boozy whipped butter is perfect to slather on top of your morning toasts, mince pies and even as an accompaniment to your Christmas pudding.

INGREDIENTS

250g butter 2 shots brandy (more to taste) ¼ cup brown sugar 1 pinch salt 1 tablespoon vanilla extract Lemon/orange zest

METHOD

Chop your butter into small cubes and add to a saucepan to melt. Turn the heat to a medium high and stir continuously for 4-5 minutes until the butter starts browning. Take the butter off the heat and add the brown sugar, brandy, vanilla extract and salt. Mix the ingredients in until they start to melt with the butter and turn into a homogenous mixture.

METHOD

Fill a large mixing bowl with ice and transfer the butter to a smaller mixing bowl and place this bowl on top of the ice. Using an electric whisk, start whisking the butter at a high speed for 3 minutes. Scrape the edges of the bowl from time to time to ensure no hard bits of butter remain. Whisk for an additional 3 minutes or until the butter starts to resemble the consistency of whipped cream.

Taste the butter to check if it is adequately sweet and add more honey, if needed. Allow it to set in the fridge for about an hour. Scoop the butter with a spatula into a serving bowl and grate some orange or lemon zest on top, before serving.
