Shrikhand is a traditional Gujarati yoghurt-based sweet dish that comes in various flavours, including kesar, mango, and strawberry. Explore an easy-to-make strawberry shrikhand recipe before the fruit goes out of season.
200 grams fresh strawberries 500 grams yoghurt ½ tbsp cardamom powder 100 grams powdered sugar
Strain the yoghurt in a muslin cloth till it is devoid of any whey, and assumes a solid and a dense structure.
Puree the strawberries in a blender till they form a smooth and thick mixture that is completely free of wrinkles.
Add the set yoghurt to the pureed strawberries concoction and whisk them thoroughly to ensure they blend well.
Add cardamom powder and powdered sugar to the yoghurt and pureed strawberries concoction to infuse the sweet dish with more depth and refinement. Continue whisking till satisfied.
Refrigerate the set shrikhand for about 5–6 hours. Relish it in chilled form once the shrikhand has been completely cooled.
