This healthy pineapple smoothie is sweet and refreshing. Made with just three ingredients, it’s a vegan and vegetarian-friendly drink ready in 10 minutes for a cooling treat.
2 cups chopped pineapple (or 9-10 slices) 1.5 cups coconut milk 1 pinch ground cinnamon (optional) 1-2 tablespoons sugar or sweetener (optional)
Place the chopped pineapple in a blender or mixer jar.
Add coconut milk and a pinch of ground cinnamon to the blender.
Blend the mixture until the pineapple pieces are fully pureed with no chunks.
Add the remaining coconut milk and blend until smooth and creamy.
Pour the smoothie into glasses immediately after blending. Garnish with pineapple cubes or cherries and serve chilled.
