Rusk and tea, also known as chai toast, are India's favourite pair during teatime. The crunch and subtle flavour of the rusk pair exceptionally well with a creamy cup of tea. But to make this affair a little healthier, here's an easy rusk recipe made using whole wheat instead of all-purpose flour:
2 cups whole wheat flour 1/2 cup powdered jaggery or sugar 1/4 cup vegetable oil 1/2 cup milk (or as needed) 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon cardamom powder Pinch of salt
Mix flour, baking soda, cardamom powder, jaggery or sugar, baking powder, and salt.
Pour in enough milk to make a smooth dough after gradually adding the oil.
After shaping the dough into logs, bake it for 30 to 35 minutes at 180°C (350°F) or until golden brown.
After allowing the logs to cool, cut them into 1-inch-thick slices.
For 20 to 25 minutes, bake slices at 150°C (300°F) or until they are crisp and dry.
Before storage, let the rusks cool on a rack.
