Welcome Spring With The Freshness Of Lemon Coriander Soup

Embrace the vibrant flavours of lemon and coriander with this refreshing soup, ideal for welcoming the rejuvenating spirit of spring and savouring the essence of the season. 

Ingredients

4 cups vegetable broth 1 cup finely chopped coriander leaves 1/4 cup lemon juice 2 cloves garlic, minced 1-inch ginger, grated 1 green chili, finely chopped Salt and pepper to taste 1 tablespoon olive oil Spring onions for garnish 

Step 1 

Heat olive oil in a pot, sauté garlic, ginger, and green chili until fragrant. Add vegetable broth, bring to a simmer, and stir in coriander leaves. 

Step 2

Season with salt and pepper, let it simmer for 10 minutes. Add lemon juice, stir well, and let it simmer for an additional 5 minutes. 

Step 3

Garnish with spring onions and serve hot. Enjoy the invigorating flavuors of spring in every spoonful!
