Autumn season is synonymous with pumpkins, so if you want to celebrate the season’s flavours then making this easy-peasy tandoori spiced pumpkin salad recipe is just what you need.
500g pumpkin wedges 1 tbsp olive oil 1 tbsp tandoori masala ½ tsp garlic powder 3 tbsp vinaigrette dressing 2 tomatoes, cut into wedges 1 cup baby spinach leaves ¼ cup walnuts, toasted 1 tbsp pumpkin seeds, toasted Salt, to taste Black pepper, to taste
Place the pumpkin wedges in a large bowl, add tandoori masala, garlic powder, salt and olive oil.

Mix well, then grill the pumpkin wedges in a pan or the oven until cooked. Place them in a large salad bowl.

Add the tomatoes, baby spinach leaves, walnuts and toss well. Add salt and pepper to taste.

Add the vinaigrette and toss again. Top with pumpkin seeds.
