2 cups of broccoli cut into small florets 2 cups cauliflower cut into small florets 1 cup carrot peeled and sliced 3 cups cabbage cut into large squares 250 gms fresh black fungus 3 large cloves of garlic chopped 1 tsp ginger minced 1 long red chilli, sliced 2 tbsp cooking oil 1 tbsp chinese black rice vinegar 1 tbsp light soy sauce A pinch of sugar A dash of Asian sesame oil

Rinse all vegetables and keep drained

Cut and remove the hard bits from the base of the fresh black fungus.

Heat oil in Chinese-style wok. Add ginger, garlic, and chillies. Stir till the fragnant emerges.

Add the carrots and the black fungus. Stir fry on high heat.

Add the broccoli and cauliflower florets. Continue to fry on high heat. Add the cabbage and continue to toss.

Add the black vinegar, soy sauce and mix. Add sugar and sesame oil. Remove to a serving plate.
