A sugar-free homemade treat made with freshly squeezed watermelon juice, these popsicles are a great kiddie treat when your child wants ice cream. Make a large batch of these to enjoy everyday during the summer months, or even add a splash of rum or tequila when making for adults.
4 cups watermelon juice Juice of 1 lemon 2 tablespoons honey/maple syrup
Combine the watermelon juice, lemon juice and maple syrup in a large bowl and whisk until the mixture is homogenous.
Pour it gently into clean popsicle moulds and place a stick in each one.
Freeze the popsicles overnight or a minimum of 8 hours before unmoulding and serving.
