Watermelon Coconut Mojito: The Boozy Smoothie For Your Summer Brunch

The frozen watermelon coconut mojito is a creamy beverage that combines fresh watermelon and mint with coconut rum and milk. 

Ingredients

6 cups cubed seedless watermelon (about 5-pound whole watermelon) 1 cup fresh mint leaves, loosely packed 3/4 cup freshly squeezed lime juice, from 4 to 5 limes 1/2 cup rich simple syrup 1 1/2 cups light rum Lime wheels, for garnish Fresh mint sprigs, for garnish Watermelon wedges, for garnish 

Step 1

Blend the watermelon cubes into a smooth puree in a blender. Remove some of the watermelon pulp by straining the puree through a fine-mesh strainer.  

Step 2

Now tear the mint leaves into smaller pieces while adding them to a pitcher, along with fresh lime juice and simple syrup. Stir for about 30 seconds to infuse the sweetened juice with mint.

Step 3

Add the light rum and 4 cups of watermelon juice to the pitcher and stir well.

Step 4

To serve, pour the watermelon mojito into ice-filled glasses, garnishing each with a lime wheel, sprig of mint, and small watermelon wedge.
