1 bunch spinach 1 cup corn kernels 1 onion 2 cloves garlic 1 teaspoon ginger 1 teaspoon cumin seeds 1/2 teaspoon red chilli powder 1/2 teaspoon turmeric powder 4 cups vegetable broth Salt to taste Black pepper to taste 1/2 cup milk or cream Fresh coriander leaves, for garnish
Heat oil in a pot and sauté the onion, garlic, ginger, chopped spinach, and corn kernels in the pot. Sauté for a few minutes until the spinach wilts.
Add vegetable broth, cumin powder, red chilli powder, turmeric powder, salt, and pepper. Bring to a boil, reduce heat, and simmer for 10-15 minutes.
Blend the soup until smooth using an immersion blender or a regular blender.
Stir in milk or cream for a creamier soup.
Serve hot, garnished with fresh coriander leaves.
