Winter is almost here. Fight sickness off with this simple and warm chicken stew soup. Follow this easy recipe.
1 tbsp olive oil 1 onion 2 cloves garlic 1 carrot 1 celery stalk 1 kg boneless chicken breast 2 bay leaves 1/2 tsp thyme 1/4 tsp rosemary
1/2 tsp salt 1/4 tsp black pepper 4 cups chicken broth 1/2 cup red wine 1/2 cup diced potatoes 1/4 cup chopped carrots 1/4 cup frozen peas 1/4 cup diced mushrooms Chopped parsley for garnish
Add onion, garlic, carrot, celery, chicken breast, bay leaves, thyme, rosemary, salt and black pepper.
Add chicken broth and red wine. Bring to a boil.
Reduce heat to low, cover, and simmer for 30-40 minutes.
Add potatoes, carrots, peas, mushrooms. Simmer for an additional 10 minutes. Serve hot.
