Among all the Gujarati snacks, dhokla stands out as a beloved staple for millions. Not only does its taste and fluffiness make it a crowd-pleaser, but it's also loved for its nutritional value and probiotics which makes it a perfect guilt-free delicacy. Check out this easy recipe for making perfect dhoklas at home.
1 cup gram flour (besan) 2 tablespoons semolina (sooji/rava) 1 teaspoon ginger-green chilli paste 1 tablespoon lemon juice 1 teaspoon sugar Salt to taste 1 cup water 1 teaspoon Eno fruit salt or 1/2 teaspoon baking soda 1 tablespoon oil 1 teaspoon mustard seeds 1 teaspoon sesame seeds 2 green chillies, slit 10-12 curry leaves A pinch of asafoetida (hing)
Make the batter by mixing gram flour, semolina, ginger-chilli paste, lemon juice, sugar and salt. Add water to make a lump-free batter and let it rest for a few minutes.
Add water to the steamer and bring it to a boil. Grease the steaming mould with oil before pouring the batter.
Just before pouring the batter, add eno fruit salt or baking soda to it and mix it quickly to make it frothy and rising.
Pour the batter into the greased mould and place in the steamer.
Steam on medium heat for 15-20 minutes. Avoid opening the steamer frequently to ensure proper cooking. Check the doneness by poking a toothpick.
Once is well cooked, cut dhokla into cubes and make the temper with hot oil, mustard seeds, sesame seeds, green chillies, curry leaves and asafoetida.
Once tadka is ready, pour it on cubed dhoklas and serve.
