The most comforting South Indian meal is Ghee Roast Dosa. It is crispy with a good amount of ghee present. Ghee Roast Dosa is one of the most popular dosa varieties. Here is how to make it:
3 cup dosa rice ½ tsp methi/fenugreek seeds 1 cup urad dal 2 cup puffed rice Salt according to taste Ghee as per requirement
Soak dosa rice and methi for 5 hours.
Soak urad dal for 3 hours.
Drain off the water from urad dal and blend to a smooth paste.
Now blend the soaked dosa rice.
Bend to a slightly coarse paste adding water as required.
Transfer the rice batter to the urad dal batter.
Now take washed & squeezed puffed rice in a blender to make a smooth paste.
Mix well making sure everything is combined well.
Now cover and rest in a warm place for 8-10 hours.
After 8 hours, when the batter is well fermented, add salt to the batter.
Heat a tawa and apply ghee in a small amount.
Then once it is hot spread out the batter in a circular motion slightly making sure it is thin.
Spread ghee over dosa, cover and roast the dosa to a golden brown.
Fold the ghee roast dosa into half and serve with chutney.
