Use Starchy Potatoes 

Use regular Indian potatoes for a fluffier filling that holds shape well.

Mash Smoothly 

Mash the potatoes well without lumps as a smooth filling is the key to perfect texture. 

Add Fresh Herbs 

Add coriander, green chilies and curry leaves to the potato mixture for the real flavour. 

Spice Up the Batter 

Add turmeric, red chili powder and asafoetida to the chickpea flour batter for extra taste.
