A simple and quick dish from the heart of Gujarat, Vagharelo Bhaat is a vegetarian rice dish made with veggies and spices. This recipe is perfect for a quick meal, so try it now.
2 cups leftover rice 2 tbsp oil 1 tsp cumin seeds ¼ tsp asafoetida 1 sprig curry leaves ½ cup onions, finely chopped ½ cup capsicum, finely chopped 3 green chillies, finely chopped 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp sugar Salt, to taste Coriander leaves, for garnish Lemon juice, for garnish
Heat oil in a wok and add cumin seeds, asafoetida and curry leaves.
Once they stop spluttering, add the onion, capsicum and green chillies.
Add turmeric powder, red chilli powder, sugar and mix well.
Once the veggies are cooked, add the leftover rice and mix well.
