While Uttar Pradesh does not have a specific cuisine, it is still an unexplored region where foodies can find a variety of interesting dishes to savour. Among many staples, aloo or potato is consumed in plenty in this region. Being an integral part of street food, here are some potato-based snacks that are a must-try in Uttar Pradesh.
Stretching from Noida to Prayagraj, aloo tikki is the queen of all chaat varieties. Crispy aloo tikkis are served with chutneys, curd, and boiled chana.
When it comes to fried food, aloo kachori witnesses queues of people standing outside food stalls waiting to savour it with chutney and sabzi.
Much like Maharashtrian vada, aloo bhalla is famous in Uttar Pradesh. It is often served with chutney but people also like to make chaat with it or eat it with bread.
In Agra, Mathura, Lucknow, Kanpur, and Prayagraj, you will find food stalls shallow frying diced potatoes until crispy and serve them with green chutney.
To make aloo pakora, you have to slice potatoes and dip them in a spiced mixture of besan. Deep-fry them and serve them with green and red chutneys.
Aloo samosa is another popular snack that is widely consumed in Uttar Pradesh with evening tea. It is also used to make samosa chaat.
Puffed pastries are stuffed with spiced potato mixture. These are available throughout the year and are often consumed in the evening with tea or coffee.
