A fudgy chocolate loaf cake, the internet’s new favourite cake recipe is quick and simple to recreate at home, baking on a rainy day.
1 cup dark chocolate chips 1 + ¼ cups all-purpose flour ½ cup cocoa powder ¼ teaspoon baking soda 1 teaspoon salt 3 eggs, room temperature 1 + ¼ cups sugar ½ cup vegetable oil ¾ cup water
Preheat the oven to 162°C while you mix together the dry ingredients in a large bowl.
Grease a loaf tin with some butter and line with parchment paper.
Whisk the eggs and sugar together for 5 minutes, until the mixture is fluffy.
Melt the chocolate chips in a microwave until glossy and cool for a few minutes, before combining with the whisked eggs and sugar.
Add the oil and water, and mix until smooth.
Add the dry ingredients to the wet mixture and use a spatula to fold everything together gently.
Once all the lumps have dissolved, transfer the batter to the loaf tin and bake for 85-90 minutes.
Pierce a toothpick in the centre to check if done and remove to cool completely, on a wire rack, before slicing and serving.
