Vietnamese Summer Rolls Are The Healthy Way To Snack

Packed full of fresh veggies, herbs and flavour, these rice paper rolls are the perfect way to enjoy a healthy, tasty snack.

Ingredients

2 ounces rice vermicelli 1 teaspoon toasted sesame oil ¼ teaspoon fine sea salt 1 cup lettuce, chopped 1 cup very thinly sliced red cabbage 2 medium carrots, julienned 2 cucumbers, julienned 2 medium jalapeños, ribs and seeds removed, thinly sliced ¼ cup thinly sliced green onions ¼ cup roughly chopped fresh cilantro ¼ cup roughly chopped fresh mint 8 sheets of rice paper

Step 1

Boil and drain the vermicelli noodles, toss them with sesame oil and salt and set aside.

Step 2

Dampen a piece of rice paper, place the lettuce, noodles, cabbage, carrot, cucumber jalapeno, mint, coriander and green onion inside.

Step 2

Fold the lower edge over the fillings, roll tightly and repeat. Your healthy treats are ready!
