2 ounces rice vermicelli 1 teaspoon toasted sesame oil ¼ teaspoon fine sea salt 1 cup lettuce, chopped 1 cup very thinly sliced red cabbage 2 medium carrots, julienned 2 cucumbers, julienned 2 medium jalapeños, ribs and seeds removed, thinly sliced ¼ cup thinly sliced green onions ¼ cup roughly chopped fresh cilantro ¼ cup roughly chopped fresh mint 8 sheets of rice paper
Boil and drain the vermicelli noodles, toss them with sesame oil and salt and set aside.
Dampen a piece of rice paper, place the lettuce, noodles, cabbage, carrot, cucumber jalapeno, mint, coriander and green onion inside.
Fold the lower edge over the fillings, roll tightly and repeat. Your healthy treats are ready!
